Aloo Gobi is a popular vegetarian Indian dish made with potatoes (aloo) and cauliflower (gobi). It’s often cooked in a flavorful masala sauce, making it a satisfying and comforting meal.
Ingredients:
- 1 medium potato, peeled and cut into florets
- 1 medium cauliflower, cut into florets
- 2 tablespoons oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- 1 cup water
- 1 tablespoon chopped fresh cilantro
Instructions:
- Cook the vegetables: In a large pot, combine potatoes and cauliflower florets. Add water to cover and bring to a boil. Reduce heat and simmer until the vegetables are tender but not mushy. Drain and set aside.
- Make the masala: Heat oil in a large pan over medium-high heat. Add onions and cook until softened. Add garlic and ginger, and cook for another minute.
- Add spices: Stir in cumin, coriander, turmeric, chili powder, and garam masala. Cook for 30 seconds, or until fragrant.
- Combine vegetables and masala: Add the cooked potatoes and cauliflower to the pan with the masala. Toss to coat.
- Simmer and serve: Add water to create a thin gravy. Simmer for 5-7 minutes, or until the gravy has thickened. Adjust seasoning with salt to taste. Garnish with chopped cilantro and serve hot.
For a richer flavor, you can add a tablespoon of tomato paste or a splash of cream to the gravy.
