Ingredients:
- 500g chicken, cut into bite-sized pieces
- 1 cup yogurt
- 1 tablespoon Chettinad masala
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon garam masala
- 1/4 cup coconut milk
- 1/4 cup water
- Salt to taste
- 2 tablespoons oil
Instructions:
- Marinate the chicken: In a large bowl, combine the yogurt, Chettinad masala, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Add the chicken pieces and mix well to coat. Cover and refrigerate for at least 30 minutes, or preferably overnight.
- Sauté the chicken: Heat the oil in a large skillet or pot over medium heat. Remove the chicken pieces from the marinade and shake off any excess liquid. Sauté the chicken until browned on all sides.
- Add the sauce: Pour the coconut milk and water into the pan. Stir to combine.
- Simmer: Bring the mixture to a simmer and cook for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
- Serve: Serve hot with naan, roti, or rice.
Tips:
- You can adjust the spiciness of the dish by adding more or less red chili powder.
- For a richer flavor, you can add a tempering of mustard seeds, curry leaves, and dried red chilies.
