Chicken masala is a popular Indian curry dish that’s made with chicken, onions, tomatoes, and a blend of aromatic spices. The rich and creamy sauce, often made with coconut milk or cream, is what gives chicken masala its signature flavor.
Ingredients:
- 500g chicken, cut into bite-sized pieces
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon garam masala
- 1/4 cup chopped fresh cilantro
- 1/4 cup coconut milk or cream
- 1/4 cup water
- Salt to taste
- 2 tablespoons oil
Instructions:
- Sauté spices: Heat the oil in a large skillet or pot over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then, add coriander powder, red chili powder, turmeric powder, and garam masala. Sauté for another 30 seconds.
- Add onions and garlic: Add the chopped onions and minced garlic. Sauté until the onions become soft and translucent.
- Add ginger-garlic paste: Add the ginger-garlic paste and cook for another minute.
- Add chicken: Add the chicken pieces to the pan and cook until browned on all sides.
- Add coconut milk or cream: Pour the coconut milk or cream into the pan and stir to combine.
- Simmer: Add the water and bring the mixture to a simmer. Cover and cook for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
- Add cilantro and serve: Stir in the chopped cilantro and adjust the salt to taste. Serve hot with naan, roti, or rice.
Tips:
- For a spicier chicken masala, add more red chili powder or some chopped green chilies.
- You can add other vegetables like potatoes or peas to the chicken masala for a more filling meal.
- Serve chicken masala with a side of raita or mint chutney.
