The biggest challenge for any housewife is how to make a perfect Indian lunch for their husbands. For a full traditional food you will end up in making Roti/Rice with Dal and a vegetable curry. This takes a lot of time to prepare. So I’ve come up with a quick and easy way to make healthy lunch food. If you wish you can also add boiled rice while cooking dal.

Ingredients

  • 1/2 cup Arhar Dal
  • 1 medium size chopped Onion
  • 1 medium size chopped Tomato
  • 1 Potato cut in diagonal shape
  • 1 Carrot cut in diagonal shape
  • 1/2 cup Cauliflower cut into big pieces
  • 1/2 cup Peas
  • 1/2 tsp Turmeric powder
  • 1 tsp Red Chilli powder
  • Salt to taste
  • 1 tsp Oil
  • 1 tsp Cumin seeds
  • A pinch of Asafetida (Hing)
  • 2 tbsp Ghee
  • 1” Cinnamon stick
  • 2-3 cloves
  • 1 Bay leaf
  • 1” chopped Ginger
  • 2-3 cloves Garlic
  • 2 Green Chillies (as per your taste)
  • 1 tsp Garam Masala (optional)

Steps

  1. Wash the dal nicely and soak it for 15 mins.
  2. Drain out the water and boil the dal with 3 cups of  water with little salt and turmeric in a pressure cooker. Keep it on a high flame for 1 whistle, then lower the flame to medium for another 3 whisltes.
  3. Take a pan and boil all the vegetables- potato, cauliflower, peas and carrot with little salt for 5 to 7 mins in gas stove or microwave.
  4. Now take another pan and add ghee in it.
  5. When ghee is hot, add cumin seeds. When it begins to splutter, add hing(Asafetida), green and red chilli, cinnamon, cloves, bay leaf, chopped ginger and garlic and onion. Saute it till the raw smell goes and the onion becomes golden brown.
  6. Now add the chopped Tomatoes and cook it for 2 mins.
  7. Now add salt and red chilli powder. Cook it for half a min and then add the boiled vegetables to this pan.
  8. Cook it for 2 mins and then add the boiled dal to it.
  9. Let the dal boil for 3 to 4 mins . Add garam masala if required.
  10. Put in a serving dish, sprinkle over chopped Coriander and serve hot.
  11. To give it an extra taste and make it look like the dal of restaurants, heat oil once again in a pan, add a few cumin seeds and a pinch of red chilli powder. Pour this over the dal and serve.

Serving Instructions

Serve hot with Bread, Roti or Rice.
