Veg Manchurian is a popular North Indian vegetarian dish that’s often served as a starter or appetizer. It consists of deep-fried vegetable balls coated in a tangy, sweet, and spicy sauce.
Ingredients:
For the vegetable balls:
- 1 cup cauliflower florets, finely chopped
- 1/2 cup carrots, finely chopped
- 1/4 cup potatoes, finely chopped
- 1/4 cup cabbage, finely chopped
- 1/4 cup cornflour
- 1/4 cup rice flour
- 1/4 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon garam masala
- Salt to taste
- Oil for frying
For the sauce:
- 2 tablespoons oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon garam masala
- 1/4 cup tomato ketchup
- 1/4 cup soy sauce
- 1/4 cup water
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Salt to taste

- Make the vegetable balls: Combine the cauliflower, carrots, potatoes, and cabbage in a bowl. Add the cornflour, rice flour, red chili powder, turmeric powder, garam masala, and salt. Mix well until a dough forms.
- Shape the balls: Divide the dough into small balls and roll them in your palms.
- Fry the balls: Heat oil in a deep pan over medium heat. Fry the vegetable balls until golden brown and crispy.
- Make the sauce: Heat oil in a separate pan. Add the onion and sauté until softened. Add the garlic, ginger-garlic paste, red chili powder, turmeric powder, garam masala, tomato ketchup, soy sauce, and water. Stir well.
- Thicken the sauce: Add the cornstarch mixture and stir until the sauce has thickened.
- Combine and serve: Add the fried vegetable balls to the sauce and toss to coat. Serve hot with rice or noodles.
