Veg Manchurian

Veg Manchurian is a popular North Indian vegetarian dish that’s often served as a starter or appetizer. It consists of deep-fried vegetable balls coated in a tangy, sweet, and spicy sauce.

Ingredients:

For the vegetable balls:

  • 1 cup cauliflower florets, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup potatoes, finely chopped
  • 1/4 cup cabbage, finely chopped
  • 1/4 cup cornflour
  • 1/4 cup rice flour
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon garam masala
  • Salt to taste
  • Oil for frying

For the sauce:

  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon garam masala
  • 1/4 cup tomato ketchup
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Salt to taste

  1. Make the vegetable balls: Combine the cauliflower, carrots, potatoes, and cabbage in a bowl. Add the cornflour, rice flour, red chili powder, turmeric powder, garam masala, and salt. Mix well until a dough forms.
  2. Shape the balls: Divide the dough into small balls and roll them in your palms.
  3. Fry the balls: Heat oil in a deep pan over medium heat. Fry the vegetable balls until golden brown and crispy.
  4. Make the sauce: Heat oil in a separate pan. Add the onion and sauté until softened. Add the garlic, ginger-garlic paste, red chili powder, turmeric powder, garam masala, tomato ketchup, soy sauce, and water. Stir well.
  5. Thicken the sauce: Add the cornstarch mixture and stir until the sauce has thickened.
  6. Combine and serve: Add the fried vegetable balls to the sauce and toss to coat. Serve hot with rice or noodles.
