Vegetable Biryani: A Flavorful Indian Rice Dish

Vegetable Biryani is a fragrant and flavorful rice dish loaded with mixed vegetables. It’s a popular vegetarian option that showcases the vibrant flavors of Indian cuisine.

Ingredients:

For the Rice:

  • 2 cups basmati rice, washed and soaked for 30 minutes
  • 4 cups water
  • 1 bay leaf
  • 2 cloves
  • 1 cinnamon stick
  • 1 cardamom pod
  • 1 teaspoon cumin seeds
  • 1 teaspoon black peppercorns
  • Salt to taste

For the Vegetable Masala:

  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 cup mixed vegetables (e.g., carrots, peas, cauliflower, potatoes)
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Cook the rice: In a large pot, combine rice, water, bay leaf, cloves, cinnamon stick, cardamom pod, cumin seeds, black peppercorns, and salt. Bring to a boil, then reduce heat and simmer until the rice is tender and the water is absorbed. Fluff the rice with a fork and set aside.
  2. Make the vegetable masala: Heat oil in a large pan over medium-high heat. Add onions and cook until softened. Add garlic and ginger, and cook for another minute.
  3. Add spices: Stir in cumin, coriander, turmeric, chili powder, and garam masala. Cook for 30 seconds, or until fragrant.
  4. Add vegetables: Add the mixed vegetables to the pan and cook until tender-crisp. Season with salt to taste.
  5. Combine rice and masala: In a large bowl, combine the cooked rice with the vegetable masala. Toss to coat.
  6. Layer and cook: In a biryani pot or Dutch oven, layer the rice and masala mixture. Repeat until all ingredients are used, finishing with a layer of rice. Drizzle with ghee (optional) and cover with foil.
  7. Cook: Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the rice is fragrant and the flavors have melded.
  8. Serve: Garnish with chopped cilantro and serve hot.

For a richer flavor, you can add a tablespoon of tomato paste or a splash of cream to the vegetable masala.
